Unleavened Recipes
Scripture Cookies
(thanks to Ken Swiger)
(for use with Chinese dinner menu)
- 1 1/4 cups plain flour, sifted
- 1/4 cup butter
- 1/4 cup shortening
- 1/3 cup sugar
- 2 tsp. vanilla
- 1/2 tsp. salt
- 1 egg
- (36) 1/2” x 2” slips of paper with your favorite scriptures typed on them.
Mix all ingredients together. Drop by teaspoons full onto lightly greased cookie sheet. Bake at 375 for 4 to 5 minutes.
While cookies are baking, soak scriptures in water. Remove cookies to stove top. While cookies are still pliable, lay a scripture on top and fold. Return to oven and bake for 3 to 4 more minutes, watching closely to make sure scripture papers don’t burn.
(Makes about 3 dozen cookies.)
